is beautiful, with creamy, deep-orange, and sweet meat. \u00a0It is also my all-time favorite squash. \u00a0 I like them so much that within two days, I had bought two of these suckers at two separate places.\u00a0 That\u2019s OK.\u00a0 They\u2019ll be eaten quickly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1677\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/DecThreeSisters.jpg\" alt=\"kabocha squash\" width=\"578\" height=\"435\" night, I roasted, peeled, and cubed one of the squash, along with some beets \u2013 better to do it all at once, and then have easy access to ready-to-eat veggies throughout the week.<\/p>\n<p>Anyway, the squash has been sitting in the fridge waiting for me to do something with it. \u00a0Typically, I serve roasted squash with quinoa that has been spiced with cumin, raisins, pine nuts, and onion. \u00a0But, somewhere along the line, I had placed some fresh chicken chorizo on top of the container in which the squash was stored, and I decided to combine them.<\/p>\n<p>I do realize that kabocha is a Japanese variety of squash.\u00a0 But, after doing some research on how to cook using acorns, I had native foods on the brain, I came up with this Three Sisters (squash, corn, and beans) casserole that is Native American in spirit and which I believe turned out rather well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1679\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/DecThreeSisters3.jpg\" alt=\"preparing three sisters casserole\" width=\"545\" height=\"400\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/DecThreeSisters3.jpg 545w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/DecThreeSisters3-409x300.jpg 409w\" sizes=\"auto, (max-width: 545px) 100vw, 545px\" \/><\/p>\n<p>The kabocha squash is sweet; for those of you who prefer a slightly blander flavor, try butternut squash instead. \u00a0To save time, buy the prepared squash (cubed) at the grocery store and just make sure it is cooked before adding it to the onion and chorizo mixture.\u00a0 Also, I used chicken chorizo, because I had found some freshly made and knew what was in it, but you can easily substitute a gluten-free soyrizo product like <a title=\"Frieda's Specialty Produce\" href=\"http:\/\/www.friedas.com\/index.cfm?show=products_detail&amp;side=products&amp;category=Vegetarian%20Items&amp;id=297\" class=\"zrdn-list zrdn-ingredients-list nobullets zrdn-element_ingredients\">\n            <li>10-12 oz raw chorizo (GF meat or meatless variety)\r<\/li>\n\n            \n            <li>1 large onion, chopped\r<\/li>\n\n            \n            <li>6 cloves garlic, minced\r<\/li>\n\n            \n            <li>1 red jalapeno, deseeded and minced\r<\/li>\n\n            \n            <li>1 Tbsp ground cumin\r<\/li>\n\n            \n            <li>1 tsp chile powder\r<\/li>\n\n            \n            <li>1 tsp paprika\r<\/li>\n\n            \n            <li>1 Tbsp cider vinegar\r<\/li>\n\n            \n            <li>1 can of black beans, rinsed\r<\/li>\n\n            \n            <li>1 bunch swiss chard, rinsed, de-stemmed and torn into small pieces\r<\/li>\n\n            \n            <li>1 medium kabocha squash, roasted, peeled, and cubed (about 4-5 cups of squash)\r<\/li>\n\n            \n            <li>1 18-oz tube of pre-made polenta, chopped\r<\/li>\n\n            \n            <li>Salt to taste<\/li>\n\n            <\/ul>\n\n<\/div>\n<div class=\"zrdn-block-wrap zrdn-instructions\"  >    <h3 class=\"zrdn-recipe-label zrdn-instructions-label\">\n        Instructions    <\/h3>\n<ol class=\"zrdn-list zrdn-instructions-list numbers  zrdn-element_instructions\">\n\t\t            <li>Preheat oven to 350 degrees F. \u00a0Lightly oil an 8\u00d713 baking dish.\r<\/li>\n\t\t\n\t\t            <li>In a large pot, heat 1 Tbsp olive oil. \u00a0Remove skin from chorizo and saute until just done. \u00a0Pour chorizo crumbles into a bowl and set aside.\r<\/li>\n\t\t\n\t\t            <li>In the same pot that you cooked the chorizo in, add 1 more Tbsp olive oil. \u00a0Saute onion until translucent. \u00a0Stir in garlic, jalapeno, spices, and vinegar. \u00a0Cook for 2 minutes longer.\r<\/li>\n\t\t\n\t\t            <li>Add in swiss chard and cook for a minute, or until chard begins to condense.\r<\/li>\n\t\t\n\t\t            <li>Stir in cooked squash cubes and salt to taste. \u00a0Turn off heat and set aside.\r<\/li>\n\t\t\n\t\t            <li>Crumble \u2154 of the chopped polenta into the bottom of the baking dish, covering it evenly. \u00a0Pour all of the squash mixture on top and spread evenly. \u00a0Crumble remaining polenta over the top and lightly press into squash mixture.\r<\/li>\n\t\t\n\t\t            <li>Bake for 30 minutes, or until top is golden brown.\r<\/li>\n\t\t\n\t\t            <li>Serve<\/li>\n\t\t<\/ol><\/div>\n<div class=\"zrdn-block-wrap zrdn-nutrition_label\"  ><\/div>\n<div class=\"zrdn-block-wrap
