{"id":1138,"date":"2010-02-28T11:17:09","date_gmt":"2010-02-28T18:17:09","guid":{"rendered":"http:\/\/www.stormysweitzer.com\/recipes\/?p=1138"},"modified":"2016-04-23T19:50:46","modified_gmt":"2016-04-24T01:50:46","slug":"simple-gf-miso-soup-for-camping-and-backpacking","status":"publish","type":"post","link":"https:\/\/www.stormysweitzer.com\/recipes\/simple-gf-miso-soup-for-camping-and-backpacking\/","title":{"rendered":"Simple GF Miso Soup for Camping and Backpacking"},"content":{"rendered":"<p>I was craving a steaming bowl of brothy soup today, but did not have the patience to make something from scratch.\u00a0 Instead, I grabbed a box of Whole Foods\u2019 365 brand miso soup out of the cupboard, some pre-sliced baby portobello mushrooms, leftover pork loin, a bundle of bean vermicelli, and then topped it with a bunch of fresh cilantro out of the veggie crisper.\u00a0 The whole dish took 5 minutes to make.\u00a0 And it was tasty, warming and filling.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1172\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/04\/2010_02_28-tofu-mushroom-soup.gif\" alt=\"Simple GF Miso Soup for Camping and Backpacking\" width=\"578\" height=\"435\" \/><\/p>\n<p>After thinking about it, I realized this would probably be a great car camping meal.\u00a0 You can also make a backpacking version of this recipe using instant miso soup, dried herbs, and dehydrated mushrooms of your choice.<\/p>\n<p>Typically, each one to two-serving instant miso packet weighs between 0.5 and 1.05 oz \u2013 just the right weight for backpacking.\u00a0 If you can find soup packets with tofu, all the better, though you can also find freeze-dried tofu at Whole Foods or online from <a href=\"https:\/\/web.archive.org\/web\/20140804191356\/http:\/\/www.edenfoods.com\/store\/product_info.php?products_id=109995\" target=\"_blank\">Eden Organic<\/a>.<\/p>\n<p>Edward &amp; Sons makes instant vegan miso soups in a variety of flavors that they sell as Miso-Cup\u00ae, despite the fact they come in envelope packets.\u00a0 You can also find instant miso soup packets from Kikkoman, San-J, Sushi Chef, and Mishima.\u00a0 Just check your grocer\u2019s Asian foods aisle or visit an Asian grocery store and see what they have.\u00a0 You could also buy a multi-packet box from Amazon if you plan to eat them regularly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1173\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/04\/2010_02_28-tofu-mushroom-soup2.gif\" alt=\"Ingredients for Simple GF Miso Soup\" width=\"578\" height=\"435\" \/><\/p>\n<p>Rice or bean vermicelli is lightweight, as well, and typically gluten-free \u2013 be sure to check all labels.<\/p>\n<h3>Car Camping Miso Mushroom Soup Recipe<\/h3>\n<p>Makes 4 servings<\/p>\n<ul>\n<li>32 oz tetra-pak 365 Organic brand vegan miso soup<\/li>\n<li>Or boil 4 cups of vegetable broth with 3 Tbsp of miso paste<\/li>\n<li>8 oz crimini or baby portobello mushrooms, sliced<\/li>\n<li>8 oz silken tofu, leftover cooked pork, chicken, or beef, chopped<\/li>\n<li>2 vermicelli bundles<\/li>\n<li>3 green onions, diced (for garnish)<\/li>\n<li>Optional: can of bamboo shoots, drained; red pepper flakes to taste; handful of cilantro<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p>At home: Chop\/dice\/slice all tofu, meat, and vegetables.\u00a0 Place in separate baggies.<\/p>\n<p>Heat soup base.\u00a0 Add mushrooms, tofu\/meat, vermicelli noodles \u2013 and any other veg you\u2019d like to add \u2013 to soup.\u00a0 Cook for 2-3 minutes (until noodles are soft.)\u00a0 Remove from heat and add green onions, red pepper flakes, and\/or cilantro.<\/p>\n<h3>Backpacking Vegetarian Miso Mushroom Soup Recipe<\/h3>\n<p>Makes 1 hearty serving<\/p>\n<p>Total weight: ~ 4.5 \u2013 5.5 oz per serving (not including water); the herbs and spices don\u2019t add a lot of weight, but are optional if you need to cut weight\/meal.<\/p>\n<ul>\n<li>1 or 2 packets of instant miso soup (<em>You need enough miso soup mix for 2 cups of water.
