GF Bacon Cheddar Herb Muffins"},"content":{"rendered":"<p>My husband and I recently returned from a trip with friends.\u00a0 We got together for brunch to sort through the 5,500+ photos and video clips we\u2019d taken between the 5 of us.\u00a0 Thank goodness for digital cameras.<\/p>\n<p>Actually, I remember when I moved to Venezuela in 1990 for a year, I took a lead bag filled with film rolls and purchased more along the way.\u00a0 The developed photos and the cartridges that still needed to be processed were probably a good 10 pounds of my luggage weight when I returned.\u00a0 Today, I wouldn\u2019t even know where to begin if I wanted to go back through the slides and negatives.<\/p>\n<p>Technology has simply changed the way I manage media.\u00a0 Not so much with food.\u00a0 When it comes right down to it, a simple measuring cup and spoons, a mixing bowl, and some elbow grease get me through most of my baking endeavors.<\/p>\n<p>In any case, knowing that going through the pictures might take us a while, we made sure to have food on hand \u2013 eggs, sausage, muffins, and mimosas.<\/p>\n<p>A two-pound package of bacon, that I\u2019d only made it half-way through when making white chicken chili earlier in the week, as well as a chunk of sharp cheddar, some green onions, and a craving for hot bread were the inspiration for these muffins.<\/p>\n<p>Calling on <a href=\"http:\/\/www.amazon.com\/gp\/product\/1583332154?ie=UTF8&amp;tag=scsfso-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1583332154\" target=\"_blank\">Carol Fenster\u2019s Cooking Free<\/a> for a flour blend and quick batter base, I whipped up a batch of muffins that were bursting with chunky, rich and fresh      <li>1\/2 teaspoon fresh thyme\r<\/li>\n\n            \n            <li>1 teaspoon chia seed or flax meal\r<\/li>\n\n            \n            <li>1\/4 teaspoon cayenne pepper\r<\/li>\n\n            \n            <li>1 cup milk or non-dairy milk alternative\r<\/li>\n\n            \n            <li>1\/3 cup vegetable oil\r<\/li>\n\n            \n            <li>3 eggs\r<\/li>\n\n            \n            <li>1 Tablespoon agave nectar\r<\/li>\n\n            \n            <li>1 cup crumbled bacon\r<\/li>\n\n            \n            <li>2\/3 cup shredded sharp cheddar cheese\r<\/li>\n\n            \n            <li>3 green onions, chopped\r<\/li>\n\n            \n            <li>2 cloves garlic, minced<\/li>\n\n            <\/ul>\n\n<\/div>\n<div class=\"zrdn-block-wrap zrdn-instructions\" chia\/flax, and cayenne.\r<\/li>\n\t\t\n\t\t            <li>In a separate bowl, whisk together milk, oil, eggs, and agave.\u00a0 Add to dry ingredients and mix well.\r<\/li>\n\t\t\n\t\t            <li>Stir in bacon, cheese, onions, and garlic.\r<\/li>\n\t\t\n\t\t            <li>Spoon muffin batter into pan, filling each of the 12 spots equally.\u00a0 Do not smooth the muffin
