though, let\u2019s talk about garlic.<\/h3>\n<p dir=\"ltr\">Most people use garlic as an herb. \u00a0Some use it as a vegetable, putting it center stage. \u00a0<a title=\"Garlic: strength, health, protection, and flavor\" href=\"\/?p=5220\">I do both<\/a>. \u00a0And it\u2019s easy to do when the garlic is roasted.<\/p>\n<p dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1628\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/Roasted-Garlic.jpg\" alt=\"Roasted Garlic\" width=\"650\" height=\"433\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/Roasted-Garlic.jpg 650w, mellows its flavor and brings out sweetness that is hard to detect when raw. \u00a0When it\u2019s roasted, it is also buttery soft and can be spread.<\/p>\n<p dir=\"ltr\">Some garlic-roasting tips:<\/p>\n<ul>\n<li dir=\"ltr\">\n<p dir=\"ltr\">Roast more than one head. \u00a0You\u2019ll find ways to use it.<\/p>\n<\/li>\n<li dir=\"ltr\">\n<p dir=\"ltr\">Cut the tops off, making sure that the cloves around the outer edge also have the top removed.<\/p>\n<\/li>\n<li dir=\"ltr\">\n<p dir=\"ltr\">Keep the tops \u2013 either peel and use them or throw them into a freezer bag (skin and all) for soup stock.<\/p>\n<\/li>\n<li dir=\"ltr\">\n<p dir=\"ltr\">Once the garlic is roasted, squeeze the bulb from the bottom with your hands to push the cloves out of the skins or use the handle of a spoon to pop them out. \u00a0They should come out very easily.<\/p>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1629\"     <li>1 head of garlic\r<\/li>\n\n            \n            <li>1 medium onion, chopped\r<\/li>\n\n            \n            <li>2 tsp balsamic vinegar\r<\/li>\n\n            \n            <li>1 cup water\r<\/li>\n\n            \n            <li>1 tsp salt\r<\/li>\n\n            \n            <li>Fresh pepper to taste\r<\/li>\n\n            \n            <li>Pinch of thyme leaves<\/li>\n\n            <\/ul>\n\n<\/div>\n<div class=\"zrdn-block-wrap zrdn-instructions\"  >    <h3 class=\"zrdn-recipe-label zrdn-instructions-label\">\n        Instructions    <\/h3>\n<ol class=\"zrdn-list zrdn-instructions-list numbers  zrdn-element_instructions\">\n\t\t            <li>Preheat oven to 375 degrees F.\r<\/li>\n\t\t\n\t\t            <li>Cut the top off the head of garlic. Place the head on a piece of foil, drizzle with a Tablespoon of olive oil, and sprinkle with salt and pepper. Close foil around the garlic, leaving an opening for the steam to come out. Place in oven. Cook for about 45 minutes.\r<\/li>\n\t\t\n\t\t            <li>Chop 5 of the 6 tomatoes in half. Deseed by removing the watery seed part of the tomatoes. Place cut-side down on a baking sheet or in a casserole dish. Drizzle with olive oil. Place in oven. Cook for about 30 minutes. (The garlic and tomatoes can be cooked at the same time.)\r<\/li>\n\t\t\n\t\t            <li>Meanwhile, saut\u00e9 onion in 1 Tbsp of olive oil for 4 minutes. Add a teaspoon of balsamic vinegar and continue cooking for another 2 minutes.\r<\/li>\n\t\t\n\t\t            <li>When everything is cooked, put onions, roasted tomatoes, and roasted garlic into the blender with 1 cup of water. Puree.\r<\/li>\n\t\t\n\t\t            <li>Pour puree into a soup pot. Chop remaining tomato and add it to the sauce. Add in 1 more teaspoon of balsamic vinegar, salt and pepper and thyme.
