{"id":145,"date":"2009-11-06T07:39:15","date_gmt":"2009-11-06T14:39:15","guid":{"rendered":"http:\/\/therealfoodchronicles.com\/?page_id=145"},"modified":"2016-04-23T19:50:47","modified_gmt":"2016-04-24T01:50:47","slug":"hearty-russian-cabbage-soup-with-buckwheat-pilaf","status":"publish","type":"post","link":"https:\/\/www.stormysweitzer.com\/recipes\/hearty-russian-cabbage-soup-with-buckwheat-pilaf\/","title":{"rendered":"Hearty Russian Cabbage Soup with Buckwheat Pilaf"},"content":{"rendered":"<p>Last week, I made Heidi Swanson\u2019s <a title=\"101 cookbooks\" href=\"http:\/\/www.101cookbooks.com\/archives\/lime-peanut-coleslaw-recipe.html\" target=\"_blank\">Lime &amp; Peanut Coleslaw<\/a>.\u00a0 The other half of the cabbage I bought has been waiting in the refrigerator ever since, along with some carrots and a couple of potatoes\u2026together forming the inspiration for this evening\u2019s meal: cabbage soup and buckwheat kasha.\u00a0 I know, I know \u2013 it sounds a bit drab, but this Russian staple is a great meal for a cold evening.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1593\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/2009_11_08-shchi.gif\" alt=\"shchi\" width=\"578\" height=\"435\" \/>Shchi, AKA cabbage soup, and buckwheat kasha have been core to the Russian diet for ages. The common saying <em>Shchi da kasha, pisha nasha<\/em> means \u201cShchi and Kasha are our staples\u201d.\u00a0 They are so popular, in fact, that a woman was once judged a suitable wife if she could cook up a good pot of shchi.<\/p>\n<p>In any case, while I don\u2019t consider it a reflection on my womanhood or wifehood, I will offer up my own versions of these popular dishes.<\/p>\n<h3><strong>Shchi (Cabbage Soup) Recipe<\/strong><\/h3>\n<ul>\n<li>2 medium potatoes, peeled and chopped<\/li>\n<li>1 cup of carrots, chopped<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>2 cloves of garlic, chopped<\/li>\n<li>\u00bd head of cabbage, shredded<\/li>\n<li>1 can chopped stewed tomatoes<\/li>\n<li>6 cups broth (your choice)<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>4 bay leaves<\/li>\n<li>1 tsp celery seed<\/li>\n<li>1 tsp salt<\/li>\n<li>pepper to taste<\/li>\n<li>dairy-free sour cream substitute (optional)<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ul>\n<li>Heat soup pot over medium-high heat.\u00a0 Pour in olive oil, and then add onions.\u00a0 Stir for 2 minutes.<\/li>\n<li>Add potatoes, carrots, and garlic.\u00a0 Continue stirring for 5 minutes.<\/li>\n<li>Pour in broth and bring to a boil.\u00a0 For vegan version, use water or vegetable stock.<\/li>\n<li>Meanwhile, heat \u00bc inch of water in a large pan.\u00a0 Add shredded cabbage and stir for 3-4 minutes.\u00a0 Drain and add cabbage to broth mixture.<\/li>\n<li>Drain stewed tomatoes and add them to the soup.<\/li>\n<li>Reduce heat and simmer soup for 25 minutes.<\/li>\n<li>Add bay leaf, celery seed, salt, and pepper, and let cook for 5 minutes longer.<\/li>\n<\/ul>\n<h3><strong>Traditional Russian Buckwheat Kasha Recipe (naturally gluten-free)<br \/>\n<\/strong><\/h3>\n<ul>\n<li>1 cup buckwheat groats<\/li>\n<li>1 egg (optional)<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>cracked pepper to taste<\/li>\n<li>2 cups boiling water<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ul>\n<li>Crack the egg into a bowl and beat for 20 seconds.<\/li>\n<li>Pour groats into a pot over medium heat, add egg, and stir well until egg is cooked thoroughly \u2013 about 5 minutes.<\/li>\n<li>Pour boiling water , salt and pepper over buckwheat, cover tightly, reduce heat to low.\u00a0 Simmer for about fifteen to twenty minutes or until buckwheat is tender.<\/li>\n<li>Let sit on the stove with the lid on for another 5 to 10 minutes.<\/li>\n<li>Fluff and serve<\/li>\n<li>Garnish with parsley and DF sour cream substitute if you like.<\/li>\n<\/ul>\n<p><em>Note: for vegan version, leave out egg;
