{"id":154,"date":"2010-10-30T07:39:18","date_gmt":"2010-10-30T13:39:18","guid":{"rendered":"http:\/\/therealfoodchronicles.com\/?page_id=154"},"modified":"2016-04-23T19:50:25","modified_gmt":"2016-04-24T01:50:25","slug":"spaghetti-squash-gratin-with-crimini-mushrooms","status":"publish","type":"post","link":"https:\/\/www.stormysweitzer.com\/recipes\/spaghetti-squash-gratin-with-crimini-mushrooms\/","title":{"rendered":"Spaghetti Squash Gratin with Crimini Mushrooms"},"content":{"rendered":"<p>Like everyone else lately, I was looking for a recipe that that would turn spaghetti squash into something amazing.\u00a0 Not that it doesn\u2019t have merit on it\u2019s own \u2013 really, what other vegetable looks so cool when cooked?\u00a0 But, it is a pretty mild vegetable and I was looking for some kick.<\/p>\n<p>In the end, I blended ideas from the <a title=\"New York Times: Spaghetti Squash Gratin With Basil\" href=\"http:\/\/www.nytimes.com\/2010\/10\/13\/health\/nutrition\/13recipehealth.html\" target=\"_blank\">NYT<\/a> and from the <a title=\"Spaghetti Squash Gratin with Walnuts and Bacon\" href=\"http:\/\/chocolateandzucchini.com\/archives\/2009\/11\/spaghetti_squash_gratin_with_walnut_and_bacon.php\" target=\"_blank\">Chocolate and Zucchini blog<\/a>, as well as a craving for mushrooms.<\/p>\n<p>I\u00a0cut the mushrooms thickly and used regular bacon because I couldn\u2019t find the Canadian I thought we had, and which I would have preferred.\u00a0 Also, instead of pan-frying the garlic and onions, I roasted them directly in the squash halves. Cut squash in half with a sharp knife and scoop out seeds. Place garlic cloves in one half, and the onion \u2013 cut into fourths \u2013 in the other half. \u00a0Lightly baste with olive oil and cover each half with aluminum foil. \u00a0Place the squash on a baking sheet and cook for 40-50 minutes, or until squash is soft and comes away from the skin easily with a fork. Remove the squash from the heat, and allow it to cool while you prepare remaining ingredients.\r<\/li>\n\t\t\n\t\t            <li>In a large bowl, mix together eggs, non-dairy milk, chives, Sour Supreme, and spices until well blended.\r<\/li>\n\t\t\n\t\t            <li>When cool enough to handle, turn garlic and onion out onto a cutting board. Mince the garlic and chop the onion coarsely.Using a fork, pull squash away from skin and separate the spaghetti strands. \u00a0Chop squash coarsely.\r<\/li>\n\t\t\n\t\t            <li>Add onion, garlic, squash, and chopped mushrooms and Canadian bacon to \u00a0egg mixture and stir well.\r<\/li>\n\t\t\n\t\t            <li>Lightly oil a 2-quart baking dish. Scrape egg\/squash mixture into dish.\r<\/li>\n\t\t\n\t\t            <li>Bake for 20 minutes with a cover.\u00a0 Remove cover and back for another 20-25 minutes, or until nicely browned. Remove from the heat, and allow to cool for 10 minutes before serving.
