{"id":66,"date":"2013-10-17T07:38:52","date_gmt":"2013-10-17T13:38:52","guid":{"rendered":"http:\/\/therealfoodchronicles.com\/?page_id=66"},"modified":"2016-04-25T12:20:59","modified_gmt":"2016-04-25T18:20:59","slug":"dirks-chili-redux-and-the-delicious-flavors-of-cocoa-coffee-chipotle","status":"publish","type":"post","link":"https:\/\/www.stormysweitzer.com\/recipes\/dirks-chili-redux-and-the-delicious-flavors-of-cocoa-coffee-chipotle\/","title":{"rendered":"Dirk\u2019s Chili, Redux and the Delicious Flavors of Cocoa, Coffee + Chipotle"},"content":{"rendered":"<p>Almost two winters ago, I exchanged comments on food photos of several dishes shared by a man named Dirk from\u00a0Germany on Google+. \u00a0He commented on photos of the foreign\u00a0foods I shared and mentioned that many of the ingredients I posted were unavailable to him.<\/p>\n<p>Thinking back to my penpal days as a child, in which I eagerly exchanged letters with far-flung acquaintances, I decided to send Dirk a care package. \u00a0It included:<\/p>\n<ul>\n<li>Star anise<\/li>\n<li>Ceylon cinnamon<\/li>\n<li>Chipotle and several other types of dried, whole chile peppers<\/li>\n<li>A tamale spice blend<\/li>\n<\/ul>\n<p>On their own, each spice is amazing. \u00a0Combined, I could only imagine. \u00a0That is, until Dirk found a way to do it.<\/p>\n<p>He created what sounded like a\u00a0<a title=\"Chili Dirk Style\" href=\"https:\/\/plus.google.com\/111306922173966452075\/posts\/HuEyanyeLNE\" target=\"_blank\">delicious batch of beef chili<\/a>, spiced with the cinnamon, chipotle, and anise I had sent, and the addition of rich\u00a0coffee and cocoa.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1771\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Dirks-Chile-Spice-Blend-Maoomba.jpg\" alt=\"Dirk's Chile Spice Blend\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Dirks-Chile-Spice-Blend-Maoomba.jpg 800w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Dirks-Chile-Spice-Blend-Maoomba-595x396.jpg 595w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Dirks-Chile-Spice-Blend-Maoomba-450x300.jpg 450w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>The flavors sounded fantastic together, and I wanted to indulge them. \u00a0So, with my household\u2019s food sensitivities and preferences in mind, I recreated Dirk\u2019s recipe with several significant changes. \u00a0I substituted red wine for beer and chicken for beef, and left out the beans, vinegar and soy sauce. \u00a0The result may not have been quite the same as Dirk\u2019s, but by staying true to the spices, I found my version to taste as delicious as his looked.<\/p>\n<p>The resulting recipe has many ingredients, but is straightforward to make and worth the effort.<\/p>\n<h3>First, some tips:<\/h3>\n<ul>\n<li>You can get chicken chorizo from Whole Foods or other natural foods market; sometimes from your local butcher. \u00a0Be sure to remove the chorizo from the skin; it will be raw and crumbly. \u00a0You can also use ground chicken and add 1\/2 tsp each of chile powder and paprika to the mix.<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1769\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Chicken-Chorizo-Maoomba.jpg\" alt=\"Chicken Chorizo\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Chicken-Chorizo-Maoomba.jpg 800w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Chicken-Chorizo-Maoomba-595x396.jpg 595w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/10\/Chicken-Chorizo-Maoomba-450x300.jpg 450w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/p>\n<ul>\n<li>Spices like cloves, star anise, and chipotle chilies are not often used; buy small quantities from the bulk foods section of your local store. \u00a0Or, use them up in this<a href=\"http:\/\/food52.com\/recipes\/2105_ancho_chilicinnamon_chocolate_bark\"> delicious chocolate bark recipe<\/a> from Food52.<\/li>\n<li>You can use cumin, coriander, and cinnamon in dishes from a wide variety of cultures, from Mexican to Indian, so stock up.<\/li>\n<li>Red wine gives this a deep, sophisticated flavor; Scrape the bottom of the pot and stir in the browned bits \u2013 a lot of flavor comes from them.\r<\/li>\n\t\t\n\t\t            <li>Add in all remaining ingredients including the meat, tomatoes, cocoa, chipotle, and ground spice blend.
