Drinky and Stinky Garlicky Goodness continued\u2026"},"content":{"rendered":"<p>Today is the day \u2013 <a href=\"http:\/\/www.stormysweitzer.com\/recipes\/13-heads-of-garlic-and-some-strung-out-up-pork\/\" target=\"_blank\">garlic fest<\/a>!\u00a0 I\u2019m excited to see what other garlic dishes make an appearance at dinner tonight, particularly for dessert.\u00a0 I\u2019m sure it will be delicious, or, at the very least, an interesting experience.<\/p>\n<p>The second entr\u00e9e we are making is a vegetarian, dairy-free, naturally gluten-free risotto.\u00a0 Sounds delicious when I put it that way, doesn\u2019t it?\u00a0 Well fret-not; this is a flavor-packed delight.<\/p>\n<p>We continue with the roasted garlic theme, and are adding baby portobello mushrooms for body, color, and completeness as an entree.\u00a0 And again, more wine.<\/p>\n<p>The wine I am using is a new one to me.\u00a0 The woman I talked with at the liquor store recommended the <a title=\"Vendange Wines\" href=\"http:\/\/www.vendange.com\/\" target=\"_blank\">Vendange<\/a> Chardonnay.\u00a0 She said it was great for cooking and tasted good, too.\u00a0 But, what sold me was the $1.99 sale price and the fact that it\u2019s available in a resealable 2 glass-full Tetra-Pak container so I can use a bit and easily store it in the fridge until I cook again.\u00a0 I couldn\u2019t really pass up trying it.<\/p>\n<p>As far as making risotto goes, it is pretty straightforward.\u00a0 There are a couple of tricks, though, that seem to make a difference in how the rice cooks.<\/p>\n<ol>\n<li>Warm your liquids (wine, water, broth) before adding them to the sauteed rice;
