Coffee):<\/strong><\/p>\n<ul>\n<li>Saut\u00e9ed and seasoned bison, mushrooms, kale and scapes with a side of cantaloupe<\/li>\n<li>Pumpkin smoothies (kabocha, banana, spinach and some cinnamon)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1754\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals3-Maoomba-595x446.jpg\" alt=\"breakfast\" width=\"595\" height=\"446\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals3-Maoomba-595x446.jpg 595w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals3-Maoomba-400x300.jpg 400w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals3-Maoomba.jpg 800w\" sizes=\"auto, (max-width: 595px) 100vw, 595px\" \/><\/p>\n<p><strong>Lunch:<\/strong> Spinach, arugula, sprout salad with red peppers, avocados and mangoes sprinkled with toasted brown rice and dressed with a balsamic vinaigrette I\u2019d mixed up quickly at home.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1755\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals5-Maoomba-595x446.jpg\" alt=\"lunch\" width=\"595\" height=\"446\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals5-Maoomba-595x446.jpg 595w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals5-Maoomba-400x300.jpg 400w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals5-Maoomba.jpg 800w\" sizes=\"auto, (max-width: 595px) 100vw, 595px\" \/><\/p>\n<p><strong>Pack Snacks:<\/strong> Plantain chips, dried mangoes, almond butter<\/p>\n<p><strong>Light Supper: <\/strong>Grapes and olives<\/p>\n<p><strong>Beverages: <\/strong>And I drank plenty of water and green tea, as well as coffee from my little French press with a drop of whole fat coconut milk.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1756\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals4-Maoomba-595x446.jpg\" alt=\"coffee and coconut milk\" width=\"595\" height=\"446\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals4-Maoomba-595x446.jpg 595w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals4-Maoomba-400x300.jpg 400w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2013\/06\/Easy-Meals4-Maoomba.jpg 800w\" sizes=\"auto, (max-width: 595px) 100vw, 595px\" \/><\/p>\n<h3>Other Options<\/h3>\n<p>While the above is how I put together the ingredients I had \u2013 I was trying to be efficient \u2013 here are some other meal ideas you could use them in:<\/p>\n<ul>\n<li>A bison patty with a spinach side salad<\/li>\n<li>A fruit salad of mangoes, cantaloupe, grapes, and bananas<\/li>\n<li>Mashed and heated kabocha squash with toasted brown rice and coconut milk<\/li>\n<li>Arugula with roasted grapes and garlic scapes<\/li>\n<li>Saut\u00e9ed red pepper, garlic scapes, chopped olives and mushrooms rolled in kale leaves and steamed just enough to soften the leaves<\/li>\n<\/ul>\n<p>It worked out well to eat a hearty breakfast. After hiking all day on breakfast and some snacks, I really didn\u2019t crave heavy meals later on. Light fruit and veggies were all I needed.<\/p>\n<h3>The Gear<\/h3>\n<p>I was lucky that the place I stayed in had a blender, a stove with cook wear, and some dishes.
