{"id":735,"date":"2012-04-26T08:43:52","date_gmt":"2012-04-26T14:43:52","guid":{"rendered":"http:\/\/realfoodchronicles.maoomba.com\/?p=735"},"modified":"2016-04-23T19:49:18","modified_gmt":"2016-04-24T01:49:18","slug":"reinventing-chiles-en-nogada-soup-style","status":"publish","type":"post","link":"https:\/\/www.stormysweitzer.com\/recipes\/reinventing-chiles-en-nogada-soup-style\/","title":{"rendered":"Reinventing Chiles en Nogada Soup-Style"},"content":{"rendered":"<p><strong><em><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1050\" src=\"http:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/chiles-en-nogada-soup-pinnable.jpg\" alt=\"chiles en nogada soup \" width=\"325\" height=\"325\" srcset=\"https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/chiles-en-nogada-soup-pinnable.jpg 325w, https:\/\/www.stormysweitzer.com\/recipes\/wp-content\/uploads\/2016\/03\/chiles-en-nogada-soup-pinnable-300x300.jpg 300w\" sizes=\"auto, (max-width: 325px) 100vw, 325px\" \/>Deconstruct: <\/em><\/strong> <strong><em>To break something down into its component parts.<\/em><\/strong><\/p>\n<p>For a recipe, this means looking at the recipe and determining the essential ingredients \u2013 the ones that make the dish unique, satisfying, and flavorful.<\/p>\n<p>Deconstruction is one of my favorite ways to reinvent a dish when I want to experience its flavors AND tailor the ingredients to my needs and the preparation to my mood and the time I have available to cook.<\/p>\n<p><strong>The question is what dishes are worth deconstructing?<\/strong><\/p>\n<h3>How to Choose a Dish to Deconstruct<\/h3>\n<p>In my opinion, the dishes that are best to deconstruct are the ones that involve a fairly complex process, have amazing flavors and distinct ingredients, and may include ingredients that you can\u2019t or won\u2019t eat (but which can easily be removed or substituted).<\/p>\n<p>One dish that I think is worthy of deconstruction is Chiles en Nogada, a traditional Mexican dish from Puebla. It is basically chile peppers stuffed with minced meat, spices \u2013 including cinnamon, and fruit and then covered with walnut sauce and pomegranate seeds.<\/p>\n<p>The flavor combination may sound odd, but it is amazing and the reason I try to deconstruct it! It\u2019s also gorgeous. So, I break it down.<\/p>\n<p>First, as a type of <a title=\"\u201cQuick\u201d Chile Walnut Hash (a la chiles en nogada)\" href=\"\/web\/20140828175352\/http:\/\/www.realfoodchronicles.com\/quick-chile-walnut-hash-a-la-chiles-en-nogada\/\">breakfast hash<\/a>. And now, as a soup.<\/p>\n<h3>How I Deconstructed this Recipe<\/h3>\n<p>Whenever I want to deconstruct a recipe, I look at its core components and try to identify essential ingredients to leave in versus superfluous ingredients that I can leave out, as well possible substitutions for the ingredients that should be there but which I can\u2019t eat. I also try to figure out the easiest way to prepare the dish \u2013 or some variation of it \u2013 without hurting the dish or its presentation.<\/p>\n<p><strong>Essentials: <\/strong><\/p>\n<ul>\n<li>Ground meat<\/li>\n<li>Chile peppers \u2013 mild heat<\/li>\n<li>Tomatoes<\/li>\n<li>Spices \u2013 thyme and cinnamon, maybe a pinch or oregano<\/li>\n<li>Sweetness \u2013 a bit of dried fruit<\/li>\n<li>Aromatics \u2013 onions and garlic<\/li>\n<li>Walnut sauce<\/li>\n<\/ul>\n<p><strong>Superfluous: <\/strong><\/p>\n<ul>\n<li>Typical chiles en nogada use cream or milk in the walnut sauce \u2013 the walnuts are creamy enough on their own (although they do not have the richness of cream)<\/li>\n<li>Lots of fresh and dried fruit \u2013 too much for my taste<\/li>\n<li>Pomegranates and cilantro \u2013 lovely and tasty, but not essential<\/li>\n<\/ul>\n<p><strong>Easiest Way to Prepare:<\/strong><\/p>\n<p>To prepare typical chiles en nogada, you will roast and skin the chile peppers \u2013 or maybe batter and fry them and possibly soak the walnuts (which I recommend if you have the time) and dried fruit overnight before using them. I prefer to chop things up and combine them all together. Soup and breakfast hash both allow me to do that.<\/p>\n<p><strong>I\u2019m sure you want to see the recipe, so here you go.<\/strong> If you try it, I\u2019d love to hear what you think of these unique flavors.<\/p>\n<h3>Reinventing Chiles en Nogada<\/h3>\n<p>This recipe includes the essentials plus a couple of extras \u2013 like stock and sweet potatoes. All ingredients, except the walnuts, are chopped, saut\u00e9ed, and simmered. Add fat to pot, melt and coat bottom of pot.\r<\/li>\n\t\t\n\t\t            <li>Add onion, garlic, and chile peppers. Saut\u00e9 for 7-8 minutes. Remove from heat until meat is done.\r<\/li>\n\t\t\n\t\t            <li>In a separate pan on medium-high heat, cook minced pork until done, occasionally breaking it up into smaller pieces. Drain oil, if desired. Add the pork to the onion mixture.\r<\/li>\n\t\t\n\t\t            <li>Add 3 cups of the stock, as well as the yams, tomatoes, raisins, and spices to the pot. Stir and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.\r<\/li>\n\t\t\n\t\t            <li>Meanwhile, add the remaining cup of stock and the walnuts to your blender. Puree until creamy. Stir walnut cream into soup when the 15 minutes are up.\r<\/li>\n\t\t\n\t\t            <li>Remove from heat and let soup sit covered for a couple of minutes before serving.
