Pumpkin Pie Smoothie"},"content":{"rendered":"<p>Hey, it\u2019s national pumpkin month!\u00a0 I had planned to offer up my pumpkin pancake recipe, but a recent technical failure caused me to lose all recent photos\u2026 (UPDATE: <a href=\"http:\/\/www.stormysweitzer.com\/recipes\/gluten-free-pumpkin-nut-pancakes-the-real-food-chronicles\/\">Here&#8217;s the pancake recipe now.<\/a>)<\/p>\n<p>So, I made a pumpkin pie smoothie instead.\u00a0It is so good, I\u2019ve been drinking one nearly every day, and almost prefer it to pie.<\/p>\n<p>You can use canned pumpkin, but I chose to use fresh squash.\u00a0 I skinned, chopped, and roasted a\u00a0 squash \u2013 kabocha, kuri or sugar pumpkin work well \u2013 in the oven for 35-40 minutes at 375 degrees F.\u00a0I keep it in a container in the fridge and just use what I need.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-909 aligncenter\" about this smoothie:<\/p>\n<ul>\n<li>Full of beta-carotene, potassium (if you use the banana), fiber, omega-3 fatty acids, and protein, as well as many vitamins<\/li>\n<li>It tastes amazing \u2013 who wouldn\u2019t want to eat pumpkin pie for breakfast?<\/li>\n<li>It is filling and is great either before or after a workout<\/li>\n<li>There is no dairy or gluten in it<\/li>\n<li>It\u2019s a tasty way to include vegetables in your breakfast<\/li>\n<li>You can make it and take it with you<\/li>\n<li>And, it is perfect for paleo and vegetarian eaters, alike \u2013 and everyone in
