Yeah!<\/h3>\n<p>Beets are one of the most amazing additions to juice. \u00a0If you have a juicer, add this to your recipes. \u00a0If you have a blender, like I do, peel the beet, chop it into small enough pieces for your blender to handle, and mix it with juice from a fresh-squeezed orange, some kale, and a baby carrot or two. \u00a0Revel in the color and the flavor!<\/p>\n<h3>Roasted beets? Even better.<\/h3>\n<p><strong>First off, what can you do with the greens and stems?<\/strong><\/p>\n<p>Steam them, saute them, save them for soup stock, but definitely do not throw them out.<\/p>\n<p><strong>What can you do with a roasted beet? \u00a0<\/strong><\/p>\n<ul>\n<li>Slice them and serve them warm as a side.<\/li>\n<li>Let them cool and then slice \u2018em, dice \u2018em, cube \u2018em, etc. and serve them with a green salad. Make a beet salad by adding\u00a0walnuts, chives, and soft\u00a0goat cheese;<\/li>\n<li>Make homemade beet chips \u2013 such a treat!<\/li>\n<li>Cube them and toss them in a pan with some olive oil and garlic to crisp up the outsides a bit. Cut off both ends of the beet.
